Peru Primativa Apaza

This is our second time sourcing exemplary Peruvian coffee from our friends at Red Fox Coffee Merchants! By tapping into their networks and history in the country we are able to work with some great cooperatives and offer some truly tasty brews. Previously our offerings came from Cusco, but this time we’ve moved further south to the region of Puno. Puno’s landscape ranges from low, hot jungle all the way to the heights of the icy mountain tops of the Andes and somewhere in the middle is where we’re able to find what we have to share with you.

Where coffee producers sometimes batch together their lots to collectively sell and fetch a better price for their labor, sometimes a producer’s work simply shines brighter than the rest. Such is the case here with Primativa’s coffee; where even though a small quantity was produced, it is so remarkable to have necessitated a higher price and special attention.

Primativa's is one of the dreamiest, silkiest coffees we’ve had in a long time. An easy going, washed process coffee that offers a refined take on the approachable, familiar flavors you might find in our year round offerings. This is a coffee with a hint of complexity that anyone can enjoy. A coffee that makes you go “Mmmm” as opposed to an aggressive fruit bomb that can make you go “Hmm?”

On the first sip we’re getting oolong tea and hibiscus backed by smooth molasses and buttercream, accented with a clean green apple acidity. Everything comes together and evolves into a lovely medley of warm sweet vanilla and interesting soft pear-like acids that are hard to find in a balanced cup. A brew that pairs well with an early morning pastry or quiet morning in with a newspaper. Pour over, countertop dripper, espresso, this coffee is going to do you well with any brewing method. Great for either an everyday brew or something special.
